Set under the medieval arcades in the town’s historical centre, this 600-year-old building was stripped down to the core as part of a comprehensive renovation project, and refurbished with the greatest care and consideration for its original appearance. The interior design displays tasteful restraint, while also playing with accents selected to emphasise the value and impact of the ancient walls and vaults. The renovation works were carried out using only natural materials, and the day-to-day activities of both the restaurant and the rental suites are conducted according to eco-friendly principles.
